ရန္ကုန္မွာဆို လမ္းထိပ္မွာ ပဲျပဳတ္သည္ အေစာၾကီးကတည္းကရွိေနျပီ။ အေမဆိုင္အတြက္ေစ်းဝယ္ျပီး အိသက္တို႔ကိုျပန္လာႏိႈးရင္ ပဲျပဳတ္ဝယ္လာတတ္ပါတယ္။ပဲျပဳတ္ထမင္းေၾကာ္စားရင္စား(သို႔) သုတ္ျပီး ထမင္းပူေလးနဲ႔စားေပါ့.။ အိသက္တို႔ London အိမ္နားကကုလားဆိုင္မွာ ( green pea) စားေတာ္ပဲေလးေတြေရာင္းေနတာေတြ႔ေတာ့ေတာ္ေတာ္ေပ်ာ္သြားပါတယ္။ ခါတိုင္းက yellow pea ကိုပဲ ျပဳတ္စားေနရတာကိုး ။ အရသာက စားေတာ္ပဲ ကပိုျပီးစိမ့္တယ္ေလ။ ခုျပဳတ္မဲ႔နည္းက ညီမ ဝတ္ရည္ Wutyeefoodhouse ကိုရန္ကုန္ ျပန္တုန္းက ေျပာျပခဲ႔တဲ႔ နည္းအတိုင္းပါပဲေနာ္။ အိမ္မွာ ထန္းညက္လဲ ရန္ကုန္ကပို႕ထားတာရွိေနေတာ့ ထန္းညက္သုံးပါတယ္။ မရွိရင္ ၾကံသကာသုံးပါ။ အဲဒါလဲမရွိရင္ သၾကားသုံးေပါ့ေနာ္၊

Early in the morning, there was the lady hawker who sells the boiled green peas at the top of the our street in Yangon. Mum used to buy the boiled peas for us to have breakfast after shopping for her restaurant. That can be fried with rice or used it in a salad. I was so happy to find out that there is an Indian groceries located just next to our London home sells the green pea. Usually, yellow peas was used a substitute. In terms of taste, the green peas is the only solution of getting it right. This recipe has actually been shared to my friend, Wut Yee when I was in Yangon for a holiday. I used jaggery for toddy palm tree, if not, use jaggery for sugarcane. If both aren’t available, simply use sugar!

ပါဝင္ပစၥည္းမ်ား
-စားေတာ္ပဲ  500 g ( green pea, yellow pea, marrow pea)


-ထန္းညက္ ၃လုံး၊ (သၾကားဆိုရင္ ၄ဇြန္း(စားပြဲတင္)) ( ၾကံသကာ palm sugar)
-ဆား၁ဇြန္း (စားပြဲတင္)
-ဆိုဒါမႈန္႕ ၁ဇြန္း (soda powder)
ပဲမ်ားကိုဇလုံတခုထဲမွာထဲ႔  ေရစိမ္ျပီးညသိပ္လိုက္ပါ။ ည ၉နာရီေလာက္ကစိမ္ရင္ မနက္အိပ္ရာႏိုးရင္ရပါျပီ။

-500g of Green Peas/yellow peas/mellow peas

-3 pieces of jaggery( 4 tbl spoons if it is sugar)

-1 tbl spoon of salt

-1 tbl spoon of soda powder

-Let the peas be soaked under water in a container for a night, say from 9 pm to the next day around 9 am, about 12 hours would be fine.

ပဲမ်ားကိုဗန္းတခုထဲသို႔ ျဖန္႕ခင္းျပီးအဝတ္သန္႕သန္႕တခုအေပၚကအုပ္ထားျပီး ေရ မၾကာခဏျဖန္းေပးပါ

Spread the peas evenly over a tray covered with a clean cloth and spray with water frequently.

ေနာက္တေန႕ေလာက္မွာ အေညာင့္ေလးမ်ားေပါက္ေနတာေတြ႕ရပါမယ္။ အေညာင့္ေလးမ်ားရွည္မွၾကိဳက္ရင္နဲနဲထပ္ေစာင့္လိုက္ေပါ့ေနာ္။

The next day, you will see the sprouts coming out, wait a little longer if you like a longer sprouts.

ၾကိဳက္တဲ႔အေနေရာက္ျပီ ဆိုရင္ဆိုဒါေလးနယ္ျပီး နာရီဝက္ေလာက္ႏွပ္ထားလိုက္ပါ။

Once you like the length of the sprouts, then mix them with soda powder and leave it for half an hour.

ျပီးရင္ အိုးက်ယ္က်ယ္မွာ ပဲနဲ႔ေရတန္းတူထားျပီး(ပဲထက္ေရေက်ာ္ေနရင္ ပဲမ်ားျပဲသြားတတ္ပါသည္) မီးမ်ႇင္းမ်ႇင္းထားျပီး စျပဳတ္ပါ။ဆား ၊ ထန္းညက္ခဲေလးမ်ားပစ္ထဲ႔ထားလိုက္ပါ။ (ထန္းညက္ညိဳေလးမ်ား၊ၾကံသကာမ်ား မရွိရင္ သၾကားထဲ႔ျပီး ပဲငံျပာရည္အေနာက္ စားပြဲတင္ဇြန္းတဝက္ထဲ႔ျပီးျပဳတ္လို႔ရပါတယ္ေနာ္)။

You can start boiling the peas in a moderate heat by leveling the water as high as the peas in a wider opening pot. If water level is higher than the peas, then the peas would be too soft. Add salt and jaggeries into it.( Alternatively, you can use jaggery from sugarcane, then half a spoon of dark soy sauce.)

ထန္းညက္ၾကီးလို႔ ၂ခဲပဲထဲ႔ပါတယ္ အခ်ိဳၾကိဳက္ရင္ေလးခဲထိ ထဲ႔ႏိုင္ပါတယ္

Yellow pea   ဆိုရင္အခြံေတာ္ေတာ္ကြၽတ္ပါတယ္။အေပၚရံကေနကြၽတ္လာတဲ႔အခြံေလးမ်ားကိုေျဖးေျဖးခပ္ထုတ္လိုက္ရင္ရပါတယ္။ Green pea ကေတာ့အခြံကြၽတ္လာတာသိပ္မရွိပါ။ခုျပဳတ္တာ green pea  ပါ. ၁နာရီ ခြဲခန္႕ျပဳတ္ျပီးပဲေလးမ်ားျမည္းၾကည့္လိုႏူးခါနီးရင္ မီးပိတ္ျပီး ခဏအပူရွိန္ေလးနဲ႔ထားလိုက္ပါ။ ၁၀ မိနစ္ေလာက္အဖုံးအုပ္ျပီးထားျပီးရင္ ရပါျပီ။

I only put 2 jaggeries because it’s a big size, you can add up to 4 pieces if you like sweetness. Yellow peas tend to have its’ skin ripped so you need to remove it very often. But the green peas kind of stay itself. It is green pea that I am cooking. Taste a bit of it after 1 and half hours, if it is nearly ready, then switch of the heat and leave for a while with the residual heat/warm inside. 10 minutes of covering with a lid will do.

Then you can drain the water out with a sieve and then wash it with cold water to maintain the peas from being deformed. After all the greases been sieved through, you will get a wonderful and delicate peas.

  8. Sis May I know for using soda is baking soda or which kind of soda? I made pae` pyote with no good outcome that is so hard and sometime over boiled and soften.
