ငါးရွဥ့္ေျခာက္စပ္/Spicy fried eel


ရန္ကုန္ ျပန္ရင္ အေမ႔ကိုေရႊဘဲက ငါးရွဥ့္ေျခာက္စပ္ ကိုဝယ္ေကြ်းခိုင္းရတာအေမာ၊ ၂၀၁၀ ျပန္ေတာ့ အေဖ့ညီအငယ္ဆုံး (Blackpool မွာေနတဲ႔အကိုရဲ႕အေဖ)က တာေမြမွာ တရုတ္စားေသာက္ဆိုင္ဖြင့္ထားတယ္ အဲဒီနည္းေလးေမးခဲ႔ပါတယ္။

I was even weary by pestering my mum to buy me a spicy fried eel from Shwe Bel Resaturant in Yangon. When I returned in 2010, I asked my youngest uncle ( dad of my cousin brother from Blackpool) from my father’s side to give me a recipe as he runs a Chinese restaurant there.

 

ပါဝင္ပစၥည္းမ်ား/-Contents
-ငါးရွဥ့္ ၅၀၀ဂရမ္/-eel 500g
-ငရုတ္သီးမႈန္႕ ၁ ဇြန္း( စားပြဲတင္)/-a table spoon of chilli powder
-ပဲငံျပာရည္အၾကည္ ၂ဇြန္း( စပတ)/-2 table spoons of clear soy bean sauce
-ၾကက္သြန္နီ တစ္လုံး ( ဒီကၾကက္သြန္ေတြကၾကီးတယ္)/-1 onion ( onions in UK are big)
-ၾကက္သြန္ျဖဴ ၃ မႊာ၊ ဂ်င္း ၂ဇြန္း( စပတ)/-3 segments of garlic, 2 table spoons of ginger paste
-ၾကက္သြန္ျမိတ္ လက္တစစ္စာျဖတ္ျပီးသားနဲနဲ/-chopped spring onions
-ငရုတ္ေကာင္း ၁ဇြန္း( စပတ)/-1 table spoon of pepper
– ဆား၊ ၾကက္သားမႈန္႕ နဲနဲ/-salt, chicken powder
-အေၾကာ္မႈန္႕/-glutinous rice flour

ငါးရွဥ္႔အသားေတြလက္တစစ္စာေလးေတြလီွးျပီးငရုတ္သီးမႈန္႕ ၁ ဇြန္း( စားပြဲတင္)၊ ပဲငံျပာရည္အၾကည္ ၁ဇြန္း( စပတ )၊ ငရုတ္ေကာင္း ၁ဇြန္း( စပတ)၊ ဆား၊ ၾကက္သားမႈန္႕ နဲနဲ နဲ႔ နယ္ထားပါ။

Cut the eel into desired sizes and mix them with a table spoon of chilli powder, a table spoon of clear soy bean sauce, 1 tbs of pepper, salt and chicken powder.

ျပီးရင္အေၾကာ္မႈန္႕ ကိုဆားနဲနဲထဲ႔ ေရက်ဲက်ဲေဖ်ာ္ထားပါ။ငါးရွဥ္႔အသားေတြနယ္ထားတာနဲ႔ ေရာလိုက္ပါ။
ျပီးရင္ငါးရွဥ္႔အသားေတြကိုဆီမ်ားမ်ားနဲ႔ ေရႊေရာင္သန္းျပီးကြၽတ္တဲ႔႔အထိ ေၾကာ္လိုက္ပါ။ျပီးရင္ ဆီစစ္ထားပါ။

Then, the glutinous rice flour will be added with some water and salt then mix them up. After that, add the cut pieces of eel into the mixed watered flour. Then fry them up until it turns golden colour and then you can dry up the cooking oil.

  ၾကက္သြန္နီ၊ ျဖဴ ကို ဂ်င္း၊ ငရုတ္သီးခြဲျခမ္းနဲနဲ, ဆား၊ ၾကက္သားမႈန္႕ နဲနဲ ပဲငံျပာရည္အၾကည္ ၁ဇြန္း( စပတ ) နဲ႔ေၾကာ္ပါ၊

Fry the onion, garlic, crushed chilli, salt, chicken power and soy bean sauce 1tbs.

ၾကက္သြန္ေရႊဝါေရာင္သန္းျပီစဆိုရင္ေၾကာ္ျပီးသားငါးရွဥ္႔အသားေတြဒယ္အိုးထဲၾကက္သြန္ျမိတ္ေလး ေရာျပီးဆက္ေၾကာ္ပါ။ႏွစ္မိနစ္ေလာက္ဆိုရင္ခ်လိုက္ပါ။

ငါးရွဥ့္ေျခာက္စပ္ေလးရပါျပီ။

Once the onion becomes golden colour then you can add the already cooked eels pieces into it and continue frying for another 2 two minutes apporx: then the lovely spicy fried eel is ready to enjoy.
