မုန္႕ဟင္းခါး/Piquant Fish Soup With Rice Noodles


မုန္႕ဟင္းခါးဆိုတာေတာ့ျမန္မာျပည္ရဲ႕ သေကၤတ တစ္ခုပါေနာ္၊ ဘယ္အခ်ိန္စားမလဲ မ႐ိုးဘူးဆိုတဲ႔ ရိုးရာအစားအစာပါ၊ ခ်က္နည္းေလးေတြက ေနရာေဒသ အလိုက္နဲနဲခ်င္းစီကြာပါတယ္။ အဲဒါနဲ႔ ေနရာေဒသ အလိုက္ကြာတယ္ဆိုလို႔ အညာမွာ ငယ္ငယ္တုံးက မိဘေတြရွင္ျပဳအလႉ သြားလုပ္တုံးကေပါ့၊ ရြာထိပ္မွာ မုန္႕ဟင္းခါးသည္ ေရာက္ေနတယ္ ဆိုလို႔ ေမာင္ႏွမေတြ ေျပးလိုက္ရတာ Blackpoolကအကိုလဲပါတယ္၊ ျပီးေတာ့ ပဲဟင္းေတြကိုဆမ္းေပးတာ၊ မုန္႕ဖတ္ေတြကလဲ ညွပ္ေခါက္ဆြဲလိုဟာမ်ိဳးေတြေလ၊ ခဲေလသမွ် သဲေရက် ပဲေရပြ ဆိုတာဒါေပါ့။ အမွတ္တရေပါ့ေနာ္။
ခု အိသက္ ခ်က္မွာက ေယာကၡမေမေမ(ဝါးခယ္မဇာတိပါ)  Londonလာတုံးခ်က္ျပခဲ႔တဲ႔နည္းေလးပါ၊  .

Piquant Fish Soup with rice noodles namely M0h-hnin-ghar is a signature dish of Myanmar. It will never bore you no matter whenever you like to eat. The methods of cooking are varied from one province to another. Speaking of which,  when I was younger I came with my parents to their donations in one of the provinces where I was told that at the top the village, there was a Moh-Hnin-Ghar hawker so my brother who is now in Blackpool and I were running up there in hurry only to find that the gravy was made of in fact full of chana dal. Furthermore, the noodles were like a flat type, so all my eagerness went for nothing as that was not my style. Well, it’s a memory that lives.

Now I am going to cook in the way of War Khae Ma Style, where my mother-in-law was born and she showed me the way when she was in London.

ငါးခူကိုေရစင္စင္ေဆးျပီး စပါလင္၊ ဆႏြန္း၊ ငံျပာရည္ တို႔နဲ႔ျပဳတ္ထားပါ၊ ျပဳတ္ျပီးသား ငါးကိုအသားထြင္ပါ၊ ငါးအ႐ိုးမ်ားကိုေထာင္းျပီးျပဳတ္ရည္စစ္ယူပါ(ခ်ိဳလို႔) ၊

Wash the Catfish thoroughly and boil it with spring onion, turmeric and fish sauce. Then filleting the fish and pound the bones and get the juice to use as it gives a naturally sweet taste.

ေျမပဲဆံေလွာ္ျပီး ေထာင္းထားပါ

Dry-fry the ground nuts and pound it.

  

ဆန္ေလွာ္မႈန္႔၊ ေရႊၾကည္မႈန္႕(ေလွာ္ျပီး) ေရေဖ်ာ္ထားေပးပါ

Dry-fry rice flour and semolina flour are to be diluted with water.

ၾကက္သြန္နီ၊ ၾကက္သြန္ျဖဴ ကိုဂ်င္းနဲ႔ ေထာင္းျပီးစပါလင္၊ ဆႏြန္းနဲ႔ ဆီသတ္  ငါးအသားထဲ႔ျပီး ကြၽတ္လာတဲ႔အခါ ငါးျပဳတ္ရည္ထဲ ထဲ႔ျပီးေရတစ္လီတာခဲြေလာက္ထပ္ ထဲ႔ျပီးပြက္ပါေစ၊ ပြက္တဲ႔အခါကုလာပဲျပဳတ္ရည္ႏွင္႔ေခ်ထားျပီးသားပဲႏွစ္၊ ေျမပဲဆံေလွာ္ ေထာင္း၊ ဆန္ေလွာ္မႈန္႔၊ ေရႊၾကည္မႈန္႕(ေလွာ္ျပီး) ေရေဖ်ာ္ျပီးသားတို႔ကိုေရာပါ၊ အေပါ့အငံျမည္းျပီးလိုတာထပ္ထဲ႔ပါ၊

Sizzle the onions, garlic and ginger which are already pounded with turmeric and add the boneless fish until it’s crispy. Then add in a bigger pot, add a boiled fish water about 1 and half litres until it boils then drop in the chana dal boiled water, paste chana dal, pounded ground nuts, dry-fry rice flour and dry-fry semolina with water. Then add a bit more fish sauce if necessary.

မုန္႕ပန္းကန္ထဲကို မုန္႕ဖတ္ထဲ႔ ဆီခ်က္ထဲ႔ ၊ငရုတ္သီးအက်တ္မႈန္႕လိုသေလာက္၊ နံနံပင္၊ ၾကက္ဥ၊ ပဲကပ္ေၾကာ္  အီၾကာေကြး တို႔နဲ႔ ျပင္ပါ၊ ပြက္ပြက္ဆူေသာ ဟင္းခ်ိဳကိုထဲ႔ျပီးငံျပာရည္၊သံပုရာသီး လိုသလိုထဲ႔ျပီးစားႏိုင္ပါျပီ..

Lastly, add the small onions and boiled eggs. When it boils, sprinkle the pepper.

To prepare a dish, in a serving bowl, add the boiled rice vermicelli, then cooked oiled with garlic, dried crushed chilli, coriander, slices of eggs, fried chick peas in glutinous dough, deep fried glutinous rice stick and the fish sauce as required and fresh lime juice as required then it is ready to enjoy by pouring the gravy on top of it.
